Mixed Greens, Mango and Pecan Salad
A delicious salad perfect for barbeques or a light summer dinner.
Tips
Spice things up by adding some diced and seeded jalapeño peppers.

Ingredients
Dressing:
- 1/2 cup orange juice 125 mL
- 2 Tbsp lime juice 30 mL
- 1 Tbsp white vinegar 15 mL
- 1/3 cup canola oil 75 mL
- 1 Tbsp honey 15 mL
- 1 Tbsp tequila or apple juice15 mL
- 1/2 tsp salt 2 mL
- 1/4 tsp pepper 1 mL
Salad:
- 8 cups mixed greens 2 L
- 2 orange, sectioned 2
- 1 mango, medium dices 1
- 1 red onion, thin slices 1
- 1/3 cup fresh cilantro 75 mL
- 1/3 cup pecan halves 75 mL
- lime zest
Instructions
- In bowl, mix together orange and lime juices, vinegar, canola oil, honey, tequila, salt and pepper. Seasoning to taste. Keep refrigerated until ready to use.
- In another bowl, toss together canola greens, orange, mango, onion and cilantro.
- Drizzle desired amount of dressing over salad and garnish with pecans and lime zest. Serve.
Serving Size: ½ cup (125 mL) with 1 Tbsp (15 mL) dressing
